Producer Cenzio works in the Sierra Occidental mountains at high elevation, where volcanic minerality and altitude shape agave character differently than the coastal lowlands—the spirit carries the signature of stone and thin air. Raicilla remains one of Mexico's least industrialized agave categories, a parallel universe to the tequila-mezcal binary that dominates American shelves. La Venenosa partners with small-scale maestros across Jalisco and the coast, bottling single-village raicillas under each producer's name rather than blending into house consistency. Cenzio roasts Maximiliana agave in earthen pit ovens fueled by local hardwood, then ferments with wild yeasts in wooden tinas before distilling in a copper-pot Filipino still—a holdover from the Manila Galleon trade that still defines raicilla's aromatic profile centuries later. The volcanic soils of the Sierra Occidental impart a distinct minerality, and the high-altitude growing cycle concentrates sugars slowly, resulting in agave that tastes more herbal and less overtly sweet than lowland agave spirits.
