Derrumbes built its mezcal line around a simple but rare idea: each expression comes from a different state, a different maestro mezcalero, and a different production method, showing how radically terroir and technique shape agave distillate. The San Luis Potosí bottling pushes that concept to its geographic extreme. This is Mexico's northernmost mezcal-producing region, a high-altitude desert where agave cultivation edges into cattle country and the landscape turns spare and mineral-driven. It's a long way from Oaxaca, and it tastes like it. Maestro mezcalero Ricardo Pico works with Salmiana agave, a massive desert variety that can take up to twelve years to mature in the arid soils around Charcas. The production is old-school: earth-pit roasting, tahona crushing, fermentation in cowhide-lined wooden tanks, and double distillation in Filipino-style stills. The result is mezcal with a distinct minerality and brightness that sets it apart from the rounder, earthier expressions coming out of southern states. You get clean vegetal notes up front, citrus peel and a touch of bell pepper, followed by that signature smoke from the roast. The finish is crisp, almost saline, with none of the heavy char that can dominate lesser mezcals. This is a fantastic aperitif pour, especially if you're building drinks that need agave backbone without overwhelming other ingredients. It works beautifully in a mezcal Martini or anything citrus-forward, but it's just as good sipped neat alongside ceviche, oysters, or anything with bright acidity and salinity to echo that desert minerality. The clean profile also makes it a strong pairing for grilled white fish or even aged cheeses where you want contrast rather than complement. If you've only tasted Oaxacan espadín, this is a compelling argument for exploring the outer edges of the mezcal map.
