Fortaleza is what happens when someone walks away from the industrialized tequila playbook entirely. Guillermo Sauza, a fifth-generation distiller whose family name defined the category for decades, left the corporate operation in the late '90s to return to the methods his great-great-grandfather used in the 1870s. That means stone ovens instead of autoclaves, a two-ton tahona wheel instead of mechanical shredders, and copper pot stills instead of stainless columns. The result is tequila that tastes like agave instead of vanilla extract, with a texture and depth that most modern bottlings can't touch. The Reposado rests in American oak barrels for six to nine months, just long enough to round out the edges without masking what makes the blanco so compelling. The stone-crushing process leaves more fiber and plant material in the fermentation, which translates to a richer, almost oily mouthfeel that coats the palate. You'll get the caramelized agave and citrus peel you'd expect, but also something earthier: sage, wet stone, a hint of cracked black pepper. The barrel time brings butter, vanilla, and baking spice without overwhelming the vegetal core. The finish lingers with cinnamon and a delicate heat that invites the next sip. It's also proof that NOM 1493, Fortaleza's distillery designation, has become shorthand for a certain kind of uncompromising production in the same way certain Champagne houses signal intent before you pull the cork. At 80 proof, it's approachable enough for guests who think they don't like tequila, while offering enough complexity to keep the agave nerds happy.
