Ramon Pena Yellowfin Ventresca Tuna in Olive Oil *Silver Line*, 110g

Ventresca is the tuna's belly, streaked with richness, and this yellowfin version from the Silver Line melts on the tongue in a way ordinary loin never quite manages. Serve it at room temperature over ripe tomatoes with flaky salt, and say very little while eating.
