El Occidental Mezcal Papalote is produced in Axaxacualco, Guerrero, from 100% organic Papalote agave (Agave cupreata), a wild variety native to the mountainous regions of Guerrero that delivers a distinctly different profile from the more familiar Espadín-based mezcals found across most of Chicago's spirits shelves. Papalote grows at higher elevations in rocky, mineral-rich soils, and its limited geographic range makes it one of the more sought-after wild agaves in the mezcal category. The result is a mezcal that balances intensity with floral elegance, offering a window into Guerrero's rugged terroir and traditional production methods. El Occidental follows a classic Guerrero production protocol: the wild-harvested Papalote agaves are roasted for three days in earthen pits fired with local hardwoods, which impart a gentle smokiness without overwhelming the agave's natural character. After roasting, the piñas are crushed with a mechanical mill and fermented outdoors in large wooden vats, where wild yeasts from the surrounding environment drive the fermentation.
