Sonson Vaval distills this clairin on a tiny direct-fire pot still in Saint-Michel-de-l'Attalaye, deep in Haiti's Artibonite Valley, where rum-making predates industrialization by centuries. This isn't column-still molasses rum aged into submission. It's agricultural rum — rhum agricole's wild cousin — made from fresh-pressed juice of estate-grown Cristalline cane, fermented spontaneously with wild yeast and nothing else, then distilled once and bottled immediately at cask strength. No aging, no water, no filtration, no added sugar. What ferments is what you get. The Clairin category has only recently gained traction outside Haiti, thanks largely to Velier's documentation work with small producers like Vaval. These are guildhouse operations: family stills, local cane varieties, zero intervention. The flavor is nothing like what most people expect from rum. Green olive brine and grassy, almost vegetal cane sap hit first, followed by overripe banana, cracked black pepper, and something faintly medicinal — wet clay, herbs, a whisper of smoke from the fire heating the still. At 53.4%, it's got the structure to carry all that intensity without tipping into harshness. The finish is long, saline, almost savory, and bone dry. It's aggressive in the best way — a rum that demands attention and rewards it. Sip it neat if you want the full experience, or use it like you would mezcal or high-proof blanc agricole: a Ti' Punch with lime and a touch of cane syrup, or alongside ceviche, grilled fish with salsa verde, or anything briny and acid-driven. It cuts through fat beautifully, so try it next to roasted pork, plantains, or Haitian griot if you're cooking.
