The 2024 Théo Dancer "Jurassique" Savagnin comes from the son of Vincent Dancer, one of Chassagne-Montrachet's most respected producers, but this is decidedly not white Burgundy. While Théo continues to work alongside his father in the Côte d'Or, his micro-négociant project ventures into the Jura, where he sources organically and biodynamically farmed Savagnin from L'Étoile, a southwestern appellation known for its fossil-rich marl soils. The classification as Vin de France rather than under Jura AOC rules gives him more freedom in how he farms and makes the wine, an intentional choice for someone still defining his own voice. What makes this Savagnin stand apart from most expressions of the grape is the cellar approach. This is ouillé Savagnin, meaning the barrels are topped up to prevent oxidation, rather than left under a veil of flor to develop the nutty, sherry-like character associated with Vin Jaune or many traditional Jura whites. The result is a wine that emphasizes precision, purity, and direct expression of site. Théo keeps things minimal: native-yeast fermentation, no added enzymes or acids, natural malolactic, no bâtonnage, no fining or filtration. The 2024 shows the finesse and tension that's earned comparisons to serious white Burgundy in past vintages, with some tasters finding the cut and balance closer to Puligny-Montrachet than to the richer textures of Meursault. The wine opens with orchard fruit, apple, citrus, and chamomile, backed by seamless acidity that feels almost malic in its vibrancy.
